Don’t be surprised to have a restaurant adopt some animal-friendly changes in response to your efforts. The first dine-out Liberty organized was at a Greek restaurant, and the chef prepared a vegan moussaka dish, replacing the cream in the béchamel sauce. “After the event,” says Liberty, “the restaurant decided to make the veggie moussaka permanently vegan on their menu, as the result tasted the same and was a big hit with everyone.” A Caribbean restaurant she worked with, meanwhile, was so impressed they “expressed an interest in having a weekly or monthly vegetarian buffet night and possibly eventually going completely veggie with their restaurant. These same things could certainly be accomplished by individuals who were willing to take the time to speak with restaurants about vegan menu options.”
